Le Sein d’Hélène has a naturally brownish rind and a smooth, cream-coloured pate. Its aroma brings to mind sweet hay and light floral notes, while its mild dairy flavour presents a touch of nuttiness and a slight tartness.
Sein d’Hélène’s name and shape are a double entendre that offers a wink to the rolling hills surrounding Sainte-Hèlène-de-Chester, and to the cheesemaking facility’s prime location at the heart of town (from the French: “en son sein”). Label artwork by Richard Caisse.
Fromagerie La Moutonnière is a pioneer in Québec when it comes to cheese made with ewe milk. At the beginning of the 90’s, Lucille Giroux, owner of Bergerie de la Moutonnière since 1977, decided to go into the cheesemaking business. Mrs. Giroux imported 33 dairy ewes from Sweden and, in 1995, introduced her feta, Québec’s first ewe milk cheese.
