The Grey Owl is a craft cheese with an ash grey rind. Its snow-white paste features a chalky texture with a smooth mouthfeel. It has subtle caprine aromas and a delicately fresh flavour that is lightly salty and tangy.

Grey Owl is the Amerindian name of the British Archibald Stanfield Belancy. The famous naturalist and Amerindian enthusiast immigrated to Canada in 1906. He was introduced to the aboriginal way of life by his first wife. A writer and lecturer, he was one of the first champions of nature in the country. He spent almost two years on the shores of Lake Témiscouata. This ashy cheese was introduced in 2009.

Cheesemaker

The idea of opening a cheese dairy first occurred to Mario Quirion at the end of the 90’s. The Beauce native had always wanted to start his own business. When he suggested the idea of making cheese to his wife, Ginette Bégin, she was immediately on board. They quickly selected Ginette’s home region of Témiscouata for their enterprise. The couple had their heart set on developing the terroir of this region, which had not seen a cheese dairy for 35 years. Since they wanted to focus on cheesemaking rather than dairy farming, they wanted to be close to milk supplies. The facility began producing cheese in 1999.
