Beneath its thin, bloomy rind lies a firm, slightly crumbly white paste that melts into a creamy texture on the palate.
In terms of flavor, it reveals aromas of mushrooms, forest undergrowth, a hint of hazelnut, and a subtle goaty tang that will delight lovers of bold cheeses.

In 2021, Annie Boucher founded Fromagerie La Voie Lactée after several years of experience working in various cheese dairies. With limited resources, she began producing goat cheese by renting a small production space in Saint-Flavien, later relocating to Fromagerie Deschaillons. This new opportunity allowed her to pursue her passion while working on-site, just minutes away from a local goat farm. There, she created L’Apogée—a smooth, creamy goat cheese designed to win over even the most hesitant palates. Despite challenges, especially the unique pyramid shape, her cheese quickly found success. A true artisanal achievement!
