La Tommette has an orangey rind with a smooth beige interior. It features mild caprine aromas and lingering fresh milk and fruit flavours.
L'Atelier Fromagerie was founded in 2011, when veteran cheesemaker Simon Hamel decided to start producing his own cheeses. From 1999 to 2011, Simon worked as a cheesemaker for several prominent Quebec cheese producers and acquired a BAC in food processing at Laval University. He gained further experience at a farmstead goat creamery in Aveyron, France, in the summers of 2008 and 2009.
