L'Atelier Fromagerie

L'Atelier Fromagerie was founded in 2011, when veteran cheesemaker Simon Hamel decided to start producing his own cheeses. From 1999 to 2011, Simon worked as a cheesemaker for several prominent Quebec cheese producers and acquired a BAC in food processing at Laval University. He gained further experience at a farmstead goat creamery in Aveyron, France, in the summers of 2008 and 2009.

In the beginning, Simon made his cheeses in a shared space with cheesemaker Lucille Giroux at Fromagerie Moutonniere in Sainte-Hélène-de-Chester. In 2020, he built his own Fromagerie in Victoriaville. The milk is supplied by two goat’s milk producers located less than 25 km from the Fromagerie, with whom he maintains close communication aimed at prioritizing the quality of the milk.

Thanks to the quality of goat and sheep cheeses produced, Fromagerie L’Atelier has become a must in the Quebec cheese landscape.
