This cheese, with its ash-covered, flowery, and vermiculated rind, offers an aroma of hazelnut and toasted bread. Its rich and complex flavor combines goat’s milk and cream, blending sweetness with intensity. Beneath the rind, the texture is abundantly creamy, while at the heart, it becomes silky. A refined and creamy cheese with a beautiful depth of flavor.
L'Atelier Fromagerie was founded in 2011, when veteran cheesemaker Simon Hamel decided to start producing his own cheeses. From 1999 to 2011, Simon worked as a cheesemaker for several prominent Quebec cheese producers and acquired a BAC in food processing at Laval University. He gained further experience at a farmstead goat creamery in Aveyron, France, in the summers of 2008 and 2009.
