Le Canotier de l’Isle has a slightly bloomy orange rind and an ochre-coloured paste that is firm and finely granular. It boasts bold nutty flavours and rich, delicately salted flavours of cream, fruit and nuts.
Le Canotier is inspired from the recipe of an artisanal cheese that was made by the inhabitants of the island in the early 20th century. The label is a representation of a painting by Robert Gagné and depicts the only method by which mail and equipment could be transported across the river in winter: the ice canoe. Le Canotier de l’Isle was introduced in 2012.
This cheese dairy began in 1976 when 14 producers from the island founded the Société Coopérative Agricole de l’Isle-aux-Grues in order to process their milk into cheese. The operation began in 1977 and took place only in the summer.
