Founded in 2002 in Baie-Saint-Paul by Serge Garneau and Johane Roy, Fumoir Saint-Antoine is dedicated to the artisanal production of smoked salmon and Arctic char on wood planks, according to a Native tradition. Renowned for their taste and texture, Fumoir Saint-Antoine products are cold-smoked and dry-salted. This family business uses only certified organic salmon from New Brunswick. Arctic char is farmed in Charlevoix according to the strictest standards at Fumoir Saint-Antoine’ facility.
