La Tomme d’Elles is an artisanal cheese with a white-spotted brownish rind. It has a beige paste boasting floral aromas and a rather pronounced fruit and herb taste.

La Tomme d’Elles is a tribute to women in general… and to the cheesemaker’s mother and mother-in-law in particular. Originally the cheese’s label was a montage of two photos from 1945 and 1965 featuring these two ladies at age 20.

Cheesemaker

Established in 1994, Maison d’Affinage Maurice Dufour was one of the first craft cheese dairies in Québec. An agronomist by training, Mr. Dufour was looking for a way to earn a living while remaining in Charlevoix. Following a visit to “fruitières” (cheesemaking cooperatives) in France’s Franche-Comté, he entered into a partnership with Laiterie de Charlevoix to produce Le Migneron de Charlevoix. Today, the white wheels are still made by the Laiterie and ripened in Mr. Dufour’s maturing facilities.
