Le Ciel de Charlevoix is a rather sharp blue cheese with a greyish rind featuring aromas of mushroom and cream. It has a creamy texture and a slightly salty taste, with a spicy end note.
Le Ciel de Charlevoix was the first cheese to be made right at the dairy. It was been in production since 2000.
Founded in 1994, Maison d’affinage Maurice Dufour is one of the first artisanal cheese dairies in Québec. Trained as an agronomist, Maurice Dufour was looking for a way to stay in his native Charlevoix region while earning a living. To this day, the wheels are made at the Laiterie and then aged at the Maison d’affinage.
