This cheese reflects the spirit of the artist Marc Séguin, who actively participated in its creation. It is a soft cheese with a distinctly "animal" aroma and flavor. Its semi-bloomy rind, white and slightly puckered, reveals pinkish and reddish veins that deepen with aging. Inside, the smooth paste, ranging in color from pale yellow to straw yellow depending on the season, has a melting texture and releases flavors of butter and hazelnuts. Over time, hints of garlic and cabbage emerge, while aging slightly intensifies the tang.
This cheese dairy began in 1976 when 14 producers from the island founded the Société Coopérative Agricole de l’Isle-aux-Grues in order to process their milk into cheese. The operation began in 1977 and took place only in the summer.
