The Angélique-À-Marc captivates with its "herbaceous" dominant, delicately nuanced with a medium intensity. The wooden band that surrounds the soft cheese with a mixed rind throughout its aging process adds a subtly woody touch to its creamy heart. A true cheese masterpiece, with great delicacy. The Angélique-À-Marc is the second cheese born from a collaboration between the artist Marc Séguin and the cheesery.
This cheese dairy began in 1976 when 14 producers from the island founded the Société Coopérative Agricole de l’Isle-aux-Grues in order to process their milk into cheese. The operation began in 1977 and took place only in the summer.
